# Directions:
01 - Heat 2 tablespoons of vegetable oil in a large non-stick skillet over medium heat. Add diced potatoes and cook, stirring occasionally, for 10 to 12 minutes until golden and beginning to soften.
02 - Add chopped onion and bell pepper, if using. Continue cooking for 5 minutes until vegetables are tender and lightly caramelized.
03 - Stir in the sliced hot dogs or sausages and cook for 3 to 4 minutes until they develop light browning.
